Home is an obligation

If she didn't really love her home town of Waldeck, life would have taken her to a different place long ago. However, Elisabeth Zintl and her family are committed to their roots and feel connected to their home.

She originally qualified as a bank clerk and established herself as a bank manager. But coming from a family of hospitality professionals, you simply can't go against your nature. In addition to her family, Elisabeth Zintl dedicated herself with great passion to her training as a chef and added an additional training course to become a diet chef. She is now the fifth generation to run her parents' Landhotel in the Oberpfalz and has added a few smart details to the family business, Landhaus Zum Hirschen.

"For me, home is not just a gift, but also an obligation," says the Waldeck native. Like many rural regions, the Oberpfalz is also struggling with the emigration of young people. More and more houses are left empty.

All about Mother Nature

Elisabeth Zintl's hotel concept is not only characterized by regional connections. The Hollerhöfe owes its name to the lush elderberry bushes that have always been part of the landscape around Waldeck.

Why elderberry?

Unfortunately, the many uses of elderberry have been forgotten over the years. "My daughter introduced me to elderberry. As a little girl, she was so infatuated with the sweet smell of the flowers that I thought about what I could prepare with it." smiles Elisabeth Zintl. As the owner and creative head of the hotel, the hostess not only organizes the hotel's operations with a small kitchen team, she also takes care of the culinary creations in the restaurant. So it's no surprise that elderberry is now an essential part of the hotel's menu.

Not only the delicious dishes, but also the numerous stories about the elderberry bush gave Elisabeth the idea of growing her own plants and producing her own delicious treats. The flowers are lovingly picked by hand on the elderberry field that she has planted herself and used to make elderberry secco, a delicious organic sparkling wine. At the Hollerhöfe, regional connections can be experienced in all their many facets.

Vacation in our hometown

"We wanted to do something about the situation, do something good for our village and show guests that it's beautiful here," says Elisabeth Zintl.
The passionate family found their highly personal and exciting answer in the touristic use of old buildings. Several of the existing buildings in the village are being renovated peau a peau with great attention to detail and modernized for visitors.
